I'm so obsessed with perfecting these Elderberry gummy bears! Everyone at work is sick and I'm determined not to get sick and these will help!! In case you're not familiar with the benefits of Elderberries here's some info for you:
Recent studies have confirmed that elderberry can bolster immunity, counter flu and cold symptoms, and is particularly beneficial when dealing with respiratory infections. While synthetic pharmaceuticals focus on dealing with infections after they have developed -- and may have negative side effects as well -- elderberry has natural stopping power.
A recent two-year study conducted in Australia (soon to be published) found that extract from the European elder (Sambucus nigra L.) also shortened the duration of cold and flu symptoms. When a group of long-distance air travelers were divided into two groups, with one (154 people) taking a placebo and the other (158 people) taking a propriety elderberry extract, the group given elderberry showed far better results.
So now you get it!
Ok, so I made the first batch a couple weeks ago and they were ok...(not really) but on a scale of 1-10 they were about a 4. The taste was not that great and the consistency was like rubber. I ate them any ways while I thought of ways to improve these little guys. But I wondered why they weren't as tasty as the store bought ones. I looked at the ingredients on the store bought ones and guess what...the first ingredient was corn syrup! Ah ha! Full of sugar, I should have known!
The challenge was to try to make mine taste as good as store bought without using corn syrup or sugar!
So I got the idea of making the next batch with grape juice! And then I read that people were adding "Sour Cherry" concentrate to the mix.
You will need the following:
Organic dried Elderberries
Sour Cherry Concentrate
Gummy Bear Trays
Spray Coconut oil, or coconut oil and brush

And I used this grape juice
It does have sugar but I'm only eating a couple of these a day, so I figured whatever!
Then I got the Sour Cherry concentrate from Amazon. Here's the link
It's thick like syrup.

These are pretty cool and they come with 2 medicine droppers and I used that coconut oil spray on the trays.
I used Know gelatin...there are lots of different kinds but I had this in my pantry.
You have to do this in 2 steps. First you have to make the Elderberry Syrup and then the gummies.
So here's the recipe for step 1 Elderberry syrup:
Into your instant pot put the following:
2 cups of Grape juice, 1/2 cup dried Elderberries.
Put on lid and seal. Process on high pressure for 12 minutes.
Do a quick release and strain and let cool.
(You can double the recipe and keep the left over Elderberry syrup in the refrigerator)
If you don't have an Instant Pot, get one...just kidding.
Stove top method:
Add all the ingredients (except honey) to pot, and bring to a simmer. Let simmer for 45 mins to 1 hour. Strain, put back into pot and reduce by half. Let cool and stir in honey.
Now you have your Elderberry Syrup!
Now to make the gummies! This amount will fill both trays.
Take 2 cups of the Elderberry syrup and divide into two parts.
With the first part sprinkle 3 Tablespoons or 3 packets of the gelatin over the cool Elderberry syrup and let sit for 3-4 minutes. Stir it slowly until all the lumps are gone. This part is important because if you put the gelatin on hot syrup it gets all clumpy and is a big mess. (Don't ask me how I know this...)
Put the rest of the Elderberry syrup into a pan and add the gelatin/Elderberry syrup to the pan and stir. Turn on stove and let the mixture warm up. Take off stove and add 1 cup Sour Cherry concentrate. At this point you can add the honey. It's has to be cooled down so you don't kill the enzymes in the honey. I added 1 Tablespoon. Stir well.
Now you can start putting into the molds. Spray your mold with coconut oil so it doesn't stick. Use medicine dropper and fill each cavity with the mixture. (If it starts to get to thick just warm it up on the stove and it will turn liquid again)
When done put in to refrigerator to cool and set up. Usually takes about 2-3 hours. When they are set up, pop out of the mold and store in a glass jar in the refrigerator. Eat 3-4 everyday to avoid flu or take every few hours if you have the flu.
Lasts several weeks in refrigerator.
These tasted much better than my last two batches. So this is the winner!
p.s. I'm gonna take some of these to work and suggest (demand) that everyone try them!
Oh and if you have extra you can just put into a greased glass dish, let set up and then cut into squares like this.
