I made The Most Delicious Homemade Peach Pie Filling ever! And then I canned it!!

Ok, I have been wanting to try pie filling and I had bought 50 pounds of the amazing Cal Red peaches from Blum Ranch so this was the perfect time!

I used the kitchenwhisperer.net's recipe and here it is

For 2 quarts of Filling
  • 7 cups sliced peaches
  • 2 cup sugar
  • 1/2 cup ClearJel plus 2 tbl
  • 1 1/2 cups cold water or peach juice
  • 1/4 tsp cinnamon
  • 1/2 cup lemon juice
  • 2 qt jars/lids/rings
For 7 quarts of Filling
  • 6 qts of sliced peaches
  • 7 cups sugar
  • 2 cups ClearJel plus 3 tbl
  • 5 1/4 cups cold water or peach juice
  • 1 tsp cinnamon
  • 1 3/4 cup lemon juice
  • 7 qt jars/lids rings
  • Plus an additional 1/4 cup lemon juice or Fruit-Fresh pectin

I know you're saying what is Clear Gel? Well it's modified cornstarch that you use in canning. You can get it on Amazon or if you're close you can borrow some of mine!  Make sure you get the cook type!

So first you get your peaches and wash them really good.Then you have to blanch them. To do that put an X on the bottom and drop in boiling water.

Wait a couple minutes and then put in an ice bath.

When the peaches are cool, the skin slips right off!

Remove the skins and the pit and cut up until you have 7 cups of sliced peaches. Toss them with a 1/4 cup bottled lemon juice to prevent them from turning dark.

Once you have your 7 cups now you're ready to make the pie filling.

Into a large pot combine the water, sugar, clear gel and cinnamon. And whisk well. Make sure you add the cinnamon! I didn't add it on the first batch and was so sorry. I added it on all my other batches and they are amazing!!

Stir and Cook over medium high heat until mixture thickens and starts to bubble. STIR IT CONSTANTLY! Add the lemon juice and stir for one more minute. STIR IT CONSTANTLY!

Add in the peach slices and cook for 3 minutes. STIR IT CONSTANTLY! I MEAN IT!

Turn off the heat and put into your jars ( I used 16 oz. and 24 oz. jars) and leave 1 1/2-2 in headspace. It expands and you'll be happy you did. Wipe the rims of your jars with a vinegar soaked paper towel and add your lids.  Process for 30 minutes in a water bath canner or steam canner.

At first I wasn't sure about it but then I made this DELICIOUS peach cobbler and I was VERY sure about it. I was so sure I ran back out to the peach farm and bought 50 more pounds of peaches!

The peach cobbler is so...well never mind that's for my next blog!!
